My kind of meatball.


As some of you may know, I do not eat red meat.

I never have - I never will.

This eliminates several conventional foods that most people enjoy from my diet.

Traditional hamburgers, steaks, lasagna, and meatballs are all not options to me.

However, people now make these dishes including things other than beef, and today I am going to share one of my favorite recipes with you.

Chicken Parmesan Meatballs. 



I found this recipe on Pinterest, then modified it to suit my tastes.

I also serve them with veggie noodles, red sauce, and sautéed spinach.

WARNING: This is a very filling meal. Don't let your eyes get the best of your tummy.

Prepare for some serious yummies:

1 1/4 pounds ground chicken

1/2 cup breadcrumbs

1 tablespoon chopped parsley

1/2 cup parmesan cheese

salt and pepper to taste

1 clove garlic, minced

1 egg

a bit of lemon zest

3 tablespoons olive oil

red pasta sauce

fresh mozzarella cheese (enough to cover the top of each meatball)

Preheat your oven to 400 degrees.

In a bowl, mix together the first 8 ingredients. When I say mix, yes, I do mean stick your hands (which you hopefully just washed...) into the bowl full of meat and such and do work. Mix well.

Shape the mixture into pretty round balls. I suggest the size of golf balls.

Place your delicious, raw golf balls on a baking sheet covered in foil. Leave them some room to breath on all sides.

In another bowl, mix together some of your red sauce with the olive oil. Spoon this mixture on top of your meatballs.

Bake in the oven for 15 minutes. Remove. Place a square of the fresh mozzarella cheese on top of each meatball.

Bake for another 3 to 5 minutes - until the cheese and nice and melted. A little golden brown never hurt anyone.

Serve to your friends! 

It's as simple as that!
