Remember those cranberry + brie bites from Thanksgiving?
Meet a new creation straight from my brain -
pimento cheese + bacon + tomato bites.
Delicious and so easy.
This recipe was very throughly thought out - weeks in advance - and by that I mean, I cooked it up on the spot today in Publix 30 minutes before I was supposed to be at my family Christmas Eve gathering.
Here is what you need:
frozen puff pastry
REAL bacon bits
fresh Roma tomatoes
a muffin tin and some cooking spray
(If you are like me, cooking also requires a beverage - so don't forget that as well.)
Start by allowing your puff pastry to thaw. This is MUCH easier when the pastry is nice and doughy.
Cut your pastry into three inch squares.
Wash and chop your tomatoes.
If you are wondering about portions - stop it right now.
I just threw everything in a bowl together. The more tomato and bacon that you add to the pimento cheese the more flavorful these bites will be.
Mix everything in a blow.
Line your muffin tin with the puff pastry dough.
I suggest you grease the pan.
Fill your cups with the cheese mixture.
Avoid overloading them. Just a dollop will do.
Pop these babies in the oven at 375 for about 10 minutes or until the corners of your pastry are lightly brown.
Serve these to your friends and prepare for compliments!
