Sweet Potato Bread Pudding

 This sweet potato bread pudding is the perfect breakfast, brunch, or dessert dish! 

Full disclosure: I am eating the leftovers from this bread pudding as I type this. With a fork. Straight from the Pyrex dish. No. Shame. 

This sweet potato bread pudding is the perfect simple dish to serve the next time you really want to WOW your friends and family. It's perfect for Friendsgiving. It's perfect for Thanksgiving at Grandma's house. It's perfect for that festive holiday brunch you're throwing. The best part? Even though this bread pudding takes a little time to make, it takes very little effort and literally no skill. You can do this. You. Can. 

 This sweet potato bread pudding is the perfect breakfast, brunch, or dessert dish! 

Sweet Potato Bread Pudding

Prep Time = 60 minutes / Cook Time =  40 minutes / Total Time = 1 hour 40 minutes

Ingredients:

  • 2 tablespoons butter
  • 1 loaf soft Italian bread, torn into large pieces
  • 1 14 ounce can mashed sweet potatoes
  • 4 cups milk
  • 4 eggs
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup miniature semi-sweet chocolate chips 

Steps:

  1. Generously butter a 9x13 inch baking dish. Line the baking dish evenly with pieces of Italian bread. Allow the bread to sit out at room temperature for at least 30 minutes to dry out. 
  2. After the bread has had time to sit, toss the bread with the mashed sweet potatoes, being careful not to smash the pieces of bread.
  3. Preheat oven to 375ยฐF. 
  4. Beat together milk, eggs, sugar, vanilla, and cinnamon in a large bowl until well combined. Pour over bread and sweet potatoes and set aside until bread soaks up milk mixture, at least 30 minutes. Top with chocolate chips. 
  5. Bake 35 to 40 minutes, until pudding is set.
