 Simple Dark Chocolate Cherry Trail Mix Recipe

Trail Mix Day is coming! Let's celebrate with a healthy, tasty twist on the traditional nut and granola mixture we all know and love (most of the time). 

If I'm being honest, I think a lot of trail mix sucks. It's too salty, or too sweet. It's covered in some weird seasoning, or it has no flavor at all. This trail mix checks NONE of those boxes. The cherries are sweet, but not too sweet, and add a lot of moisture to the mix. The pretzels give it that snacky crunch I'm always looking for. The almonds pack in the protein. The cashews and dark chocolate bring the antioxidants. It's good stuff! 

When I'm shopping to make trail mix, I always head straight for the bulk section of my local Whole Foods. Buying bags and cans of nuts and dried fruits can get expensive, but choosing to shop in the bulk section allows you to only buy exactly the amount of each ingredient that you need, which helps cut costs. AND - the best thing about making your own trail mix - if you want more of one thing than the other, just add more! Finally, no more picking out all of the chocolate pieces...

 Simple Dark Chocolate Cherry Trail Mix Recipe

Dark Chocolate Cherry Trail Mix

Prep Time = 10 minutes / Active Time = 15 minutes / Yield = 6 servings

Ingredients:

  • 1 cup raw, unsalted almonds 
  • 1 cup raw, unsalted cashews 
  • 1 cup unsalted, no shell sunflower seeds
  • 4 ounces mini pretzels 
  • 2 tablespoons coconut oil 
  • 1 tablespoon salt
  • 1/2 tablespoon cinnamon 
  • 1/2 tablespoon raw sugar
  • 2 cups low sugar, low sodium granola 
  • 2 cups dried sour cherries
  • 2 cups dark chocolate chunks 

Steps:

  1. Preheat oven to 300°F. 
  2. In a medium bowl, combine almonds, cashews, sunflower seeds, and pretzels. Mix.
  3. Add coconut oil to nut mixture and toss, coating in oil. Add salt, cinnamon and raw sugar, continuing to toss until evenly coated. 
  4. Pour nut mixture into a cast iron skillet. Roast at 300°F for 15 minutes, stirring mixture every 5 minutes to prevent burning.  
  5. Remove skillet from the oven and allow to cool. Place mixture back in mixing bowl and allow to cool further, at least 30 minutes. (Please bowl in refrigerator to speed cooling process if necessary.) 
  6. Add cherries and dark chocolate to nut mixture. Mix. 
  7. Store in airtight containers or plastic bags.
