Double Cola Orange Upside-Down Cake Recipe

We all love a good secret ingredient. In this case, it’s Double Cola. Substituting this Chattanooga-based soda for more traditional wet ingredients gives your baked goods a wonderful spice that is perfectly balanced by the fresh orange flavor in this cake. It’s zesty, moist, and wonderfully crumbly - making it perfect to serve with Cool Whip and an ice cold Double Cola on a hot summer day.

Double Cola Orange Upside-Down Cake Recipe

Orange Double Cola Upside-Down Cake

Prep Time = 45 minutes / Total Time = 2 hours / Yield = 8 servings

Ingredients:

Candied Oranges:

  • 2 oranges, any variety

  • 4 cups water

  • 3 cups sugar

Cake:

  • 1 box super moist white cake mix

  • 3/4 cup Double Cola

  • 3/4 cup fresh orange juice

  • 1 tablespoon orange zest

  • 1 teaspoon vanilla extract

  • Butter for greasing pan

  • Cool Whip for serving

Steps:

  1. Slice 2 oranges into thin rounds.

  2. In a Dutch Oven, heat water and sugar over medium heat. Stir water and sugar mixture until sugar is completely dissolved. Cover and bring to a simmer.

  3. Add orange slices to sugar water. Return to a simmer. Cover and cook for 10-12 minutes, until orange rinds are tender. Once soft, remove oranges from liquid and pat dry. Set aside. (Be careful with your oranges, they can break apart!)

  4. Meanwhile, preheat oven to 350Β°F. Zest and juice remaining 2-3 oranges, until you have 1 tablespoon zest and 3/4 cup fresh juice.

  5. In a medium bowl combine cake mix, Double Cola, orange juice, orange zest, and vanilla extract. Mix with a hand mixer until there are no clumps.

  6. After thoroughly greasing a deep cake pan, layer oranges into the bottom of the pan. Top with cake batter and bake for 45-50 minutes, until a toothpick comes out clean.

  7. Allow cake to cool for 30-40 minutes before flipping out onto a plate.

  8. Serve with a scoop of Cool Whip!
