Raw Green Summer Salad
This is your new, go-to, “I’m too tired to cook” dinner method.
This is not a recipe.
I mean, this is kind of a recipe. Really, this is more me telling you to go do something because it’s a good idea. What is that idea exactly? Making salad out of things that don’t involve lettuce or noodles - crazy, I know.
But really, this is a thing. Think about a Caprese. No real lettuce there. No noodles. Just tasty things all mixed up together. In fact, I am here to argue just that point. A salad is not a thing built on a bed of lettuce or a goopy noodle situation. A salad is a mixture of tasty things that go well together. In fact, this is the actual definition of the word salad that you never bothered to look up:
a cold dish of various mixtures of raw or cooked vegetables, usually seasoned with oil, vinegar, or other dressing and sometimes accompanied by meat, fish, or other ingredients.
a mixture containing a specified ingredient served with a dressing.
a vegetable suitable for eating raw.
Well, how about that? If you’ve already unpacked the true essence of what a salad really is - then good for you. You’re ahead of me. If not, then let’s go on the journey of my new favorite salad together. It’s what I’m calling a raw green summer salad. Here’s what you need:
A handful of zucchini noodles (that’s a zucchini cut into noodles, usually using a spiralizer)
About 1/2 a cucumber per serving
1/2 an avocado per serving (or a whole avocado per serving if you’re an avo freak like me)
The juice of 1/2 a lemon
Decent olive oil
A sprinkle of Italian seasoning
A sprinkle of salt
A bit of feta cheese per serving
A bit of smoked salmon per serving (if you’re into that sort of thing)
A dash of chopped chives
Now. Don’t cooking anything. Seriously. Nothing. Because sometimes you just can’t. In a jar, or shaker, or other thing with a lid mix the lemon juice, a little olive oil, salt, and the Italian seasoning. Shake it all around. Pour it over the zucchini, cucumber, and avocado. Toss it all about. Put your green things in a bowl and top with smoked salmon, feta, and chives. Now eat you crazy animal.
